So this cake is one of my top 5. It was created on a day when I was really bored and all I wanted was something sweet. So I got anything cake-ish out of my cupboard and whipped this up. And to my surprise it turned out amazingly moist and coconutty! 2 eggs (separate the whites) 1 1/2 cups of raw coconut sugar (whatever sugar you have will totally do) 1 cup of moist shredded coconut 2 cups of normal flour or almond meal 1 teaspoon baking powder 1 teaspoon vanilla sugar 100g butter
Whip the yolk and sugar together till it is light. Then stir in the shredded coconut. Melt the butter and add to mix. Mix the flour, baking powder and vanilla sugar together and stir it into the wet mix. In a clean bowl whip the egg whites stiff and slowly fluff it into the batter. I poured my cake into a 10cmX20cm baking tray and had it in the oven for 40-45 minutes on 200C. Don't bake it dry as you want it to be a little sticky and moist. It really suits the coconut.
I made a real easy topping of whipped cream mixed with icing sugar and sprinkled shredded coconut on top. Perfect for a lazy afternoon.
